Ingredients

Scale
  • 1 tablespoon Olive Oil
  • 1 pound Salmon Fillets (3 or 4)
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Salt
  • 68 cloves Garlic (peeled)
  • 1/4 cup Sun-dried Tomatoes (chopped)
  • 5 ounces Fresh Spinach
  • 1 cup Pitted Green Italian Olives
  • 1/4 cup Vegetable Broth
  • 3/4 cup Coconut Cream

Instructions

  1. Rinse salmon fillets and pat dry. Season with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large non-stick pan over medium-high heat until shimmering. Cook salmon until golden brown, about 4-6 minutes per side. Remove and set aside.
  3. In the same pan, sauté garlic until fragrant. Add sun-dried tomatoes, olives, and spinach; stir in vegetable broth.
  4. Reduce heat and cook until spinach wilts. Stir in coconut cream and heat through for about a minute.
  5. Return salmon to the pan, nestling it into the sauce until heated through.
  6. Adjust seasonings as needed and serve warm over rice or pasta.
