  • 2 to 3 zucchinis (about 1 ¼ pounds)
  • 1 tablespoon Kosher salt (divided)
  • ½ cup all-purpose flour
  • ½ teaspoon black pepper
  • 1 large egg
  • â…“ cup milk
  • 1 cup Panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Olive oil (for coating)

Instructions

  1. Rinse and dry the zucchinis. Cut into sticks about ½ inch wide and 3 to 4 inches long.
  2. Lay zucchini sticks on paper towels, sprinkle with salt, and let sit for 30 minutes to draw out moisture. Pat dry afterward.
  3. Preheat oven to 425°F. Line a baking sheet with foil and place a cooling rack on top, brushing it with olive oil.
  4. In one bowl, mix flour, remaining salt, and pepper. In another bowl, whisk egg and milk together. In a third bowl, combine Panko breadcrumbs, Parmesan cheese, and Italian seasoning.
  5. Dip each zucchini stick in the flour mixture first, then the egg mixture, followed by the Panko mixture.
  6. Place coated zucchini on the prepared rack, brush lightly with olive oil, and bake for 20-25 minutes until golden brown.
