  • 2 pounds baby potatoes (mini yellow potatoes)
  • 3 tablespoons olive oil
  • 3/4 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 lemon, juiced
  • 1 garlic clove, minced
  • 1 dill pickle, finely chopped
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Boil baby potatoes in salted cold water for about 7-8 minutes until fork-tender. Drain and let cool slightly.
  3. Gently smash each potato to about 1/4 inch thick, brush with olive oil, and season with salt and pepper.
  4. Roast for 45-60 minutes until golden brown and crispy.
  5. While roasting, whisk together yogurt, mayonnaise, Dijon mustard, lemon juice, garlic, parsley, pickles, salt and pepper in a bowl.
  6. Toss roasted potatoes in the dressing once they cool slightly. Garnish with scallions if desired.
