  • 1 lb ground beef (lean or regular)
  • 45 medium russet or Yukon gold potatoes, thinly sliced (about 1/8 inch thick)
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese (sharp or mild), divided
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley or chopped chives for garnish

Instructions

  1. Brown the ground beef and chopped onion in a skillet over medium heat until cooked through; drain excess fat.
  2. Thinly slice the potatoes (about 1/8 inch thick).
  3. Layer half of the sliced potatoes in the crockpot followed by half of the cooked beef mixture and some cheddar cheese. Repeat layers.
  4. In a bowl, mix cream of mushroom soup, milk, garlic powder, salt, and pepper; pour over the layered ingredients.
  5. Cover and cook on low for 6 to 8 hours until potatoes are tender.
  6. About 15 minutes before serving, top with remaining cheddar cheese and allow to melt.
