  • 2 celery sticks (finely diced)
  • 23 garlic cloves (minced)
  • 4 cups chicken or vegetable broth
  • Kosher salt and pepper (to taste)
  • ¼ cup gluten-free flour

  • 1 cup shredded Colby jack cheese

Instructions

  1. Add the chopped potatoes, onion, carrot, celery, and garlic to your crockpot.
  2. Pour in the broth and season with salt and pepper. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the potatoes are tender.
  3. Whisk together gluten-free flour with half a cup of milk until smooth; stir into the crockpot.
  4. Add cream cheese; stir until melted and smooth. Cook on HIGH for an additional 15 minutes.
