  • 4 lbs beef shoulder (Boston Butt)
  • 1 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 10 cloves garlic (minced)
  • 1 tbsp dried oregano
  • 2 tsp ground cumin
  • 1 tbsp salt
  • 1 tsp black pepper
  • Fresh cilantro (for garnish)

Instructions

  1. Prepare the marinade by whisking together orange juice, lime juice, olive oil, minced garlic, oregano, cumin, salt, and pepper in a bowl.
  2. Place the beef in a large container or resealable bag and pour the marinade over it. Ensure the beef is well coated. Marinate for at least 3 hours or overnight for better flavor.
  3. Preheat the oven to 300°F (150°C). Place the marinated beef in a roasting pan and cover tightly with foil.
  4. Roast for approximately 4-5 hours until fork-tender.
  5. Allow the beef to rest for at least 20 minutes before slicing. Garnish with chopped cilantro before serving.
