  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Buttermilk
  • 1 cup Fresh raspberries
  • 1/4 cup Granulated sugar
  • 1 cup Heavy cream
  • 4 ounces Dark chocolate
  • 4 ounces Dark chocolate
  • 1/2 cup Heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Beat softened butter and sugar until fluffy; add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with the butter mixture, alternating with buttermilk.
  5. Bake in a prepared pan for 25-30 minutes until a toothpick comes out clean.
  6. Cool the cake before layering with raspberry mousse (made from pureed raspberries mixed with whipped cream and melted chocolate).
  7. Chill assembled layers for at least an hour before drizzling with ganache made from heated cream poured over chopped dark chocolate.
