  • 1 cup whole milk (at room temperature)
  • 1 drop green food coloring (optional)
  • 16 ounces full-fat brick cream cheese (softened to room temperature)
  • 1/2 cup unsalted butter (softened to room temperature)
  • 4 cups confectioners’ sugar
  • 1 and 1/2 teaspoons pure vanilla extract
  • Pinch salt (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the cake flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat softened butter and sugar until light and fluffy.
  4. Gradually add egg whites one at a time while mixing well.
  5. Stir in sour cream, vanilla extract, almond extract, milk, and optional food coloring until combined.
  6. Slowly add dry ingredients until just mixed; fold in chopped pistachios.
