  • 2 serrano peppers, diced
  • 1 jalapeño pepper, minced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups sour cream
  • 16 oz salsa verde
  • 6 cups cooked shredded chicken
  • 12 flour tortillas
  • 3 cups shredded cheese (sharp cheddar and Monterrey Jack)

Instructions

  1. In a skillet over medium heat, melt butter and sauté diced serrano and jalapeño peppers with minced garlic until softened.
  2. Whisk in flour to create a roux; gradually add chicken broth while stirring. Cook until the sauce thickens.
  3. Stir in sour cream, salsa verde, cumin, salt, garlic powder, white pepper, and cayenne until combined.
  4. Preheat oven to 350°F (175°C). In a bowl, combine shredded chicken with cilantro and onion. Fill each tortilla with the mixture and roll tightly.
  5. Place the rolled tortillas seam-side down in a greased baking dish. Pour sauce over enchiladas and sprinkle with cheese.
