  • 1 carrot
  • 1 stalk celery
  • 1/2 sweet bell pepper
  • 1/2 poblano pepper
  • 3 medium potatoes
  • 1 1/2 lbs fish (cod, salmon, or shrimp)
  • 810 cups water
  • Optional: 1/2 cup heavy cream and fresh herbs

Instructions

  1. Finely chop the onion, carrot, celery, sweet bell pepper, and poblano pepper.
  2. In a large pot or Dutch oven, heat butter or oil over medium heat. Sauté the chopped vegetables for about 5-7 minutes until softened; season with salt and black pepper.
  3. Add tomato paste and bay leaves; cook for another 3-5 minutes.
  4. Pour in water and add chopped potatoes. Bring to a boil then reduce to a simmer for about 15 minutes until potatoes are tender.
  5. Cut fish into 2-inch pieces and add to the pot; cook until flaky (3–5 minutes for fresh fish; 5–7 minutes for frozen).
  6. If using cream, stir in off heat and garnish with fresh herbs before serving.
