  • 5 tbsp low sodium soy sauce
  • 1 tbsp fruit juice
  • 4 skinless salmon fillets
  • 10.5 ounces shiitake mushrooms
  • 1 cup sushi rice or Arborio rice
  • 5 cups hot chicken broth
  • 1 tbsp white miso paste
  • 3 tbsp olive oil (divided)
  • Black pepper for serving
  • Chives for serving
  • Sesame seeds for serving
  • 1 tbsp unsalted butter

Instructions

  1. Marinate salmon in a mixture of soy sauce, grape juice, and brown sugar for at least 15 minutes.
  2. Sauté diced onions, celery, and garlic in olive oil until soft.
  3. Add rice to the pan and toast lightly.
  4. Deglaze with grape juice, then gradually add hot chicken broth one ladle at a time until absorbed.
  5. Stir in miso paste about 20 minutes into cooking.
  6. In another skillet, sear marinated salmon for about 4-5 minutes on each side.
  7. Serve risotto topped with salmon and garnish with chives and black pepper.
