  • ½ cup packed light brown sugar
  • ½ cup plus 2 tbsp granulated sugar
  • 2 large eggs (at room temperature)
  • ½ cup sunflower oil
  • 1 teaspoon pure vanilla extract

  • 2 cups all-purpose flour
  • 1 ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 5 oz cream cheese (softened)
  • 2 ½ tablespoon granulated sugar
  • 1 teaspoon all-purpose flour
  • ½ teaspoon pure vanilla extract
  • 2 teaspoons whole milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, brown sugar, granulated sugar, eggs, sunflower oil, vanilla extract, and milk until smooth.
  3. In another bowl, whisk together flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. For the cream cheese filling, beat together softened cream cheese, granulated sugar, flour, vanilla extract, and milk until smooth.
  6. Fill each muffin cup two-thirds full with batter; add a dollop of cream cheese filling; cover with more batter until three-quarters full.
  7. Bake for about 18 minutes or until a toothpick inserted comes out clean.
