  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 tablespoons olive oil
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 cup Greek yogurt or sour cream
  • 1/4 cup crumbled Cotija cheese or feta
  • 1 avocado (sliced)
  • Fresh cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. Cook your choice of rice according to package instructions.
  2. Season chicken breasts with salt, pepper, chili powder, and cumin. Heat olive oil in a skillet over medium-high heat and cook the chicken until golden brown on both sides; let rest before slicing.
  3. In the same skillet, add more olive oil if necessary and sauté corn and diced red onion until lightly charred. Add minced garlic and cook for an additional minute.
  4. In a large bowl, combine cooked rice with sautéed corn mixture and squeeze lime juice over top.
  5. Assemble bowls by dividing rice mixture and topping with sliced chicken, avocado, Greek yogurt (or sour cream), crumbled cheese, and cilantro.
