  • 2 large eggs
  • 3/4 cup full-fat sour cream or plain yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup whole milk
  • 1 and 1/2 teaspoons pure vanilla extract

Instructions

  1. Preheat your oven to 425°F (218°C) and prepare your muffin pan with nonstick spray or liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, salt, and chocolate chips.
  3. In another bowl, combine eggs, sour cream (or yogurt), vegetable oil, milk, and vanilla extract until smooth.
  4. Pour wet ingredients into dry mixture and gently fold until just combined; avoid overmixing.
  5. Fill muffin liners to the top with batter and bake for 5 minutes at 425°F then reduce heat to 350°F (177°C) for an additional 15-16 minutes or until a toothpick comes out clean.
  6. Allow muffins to cool in the pan for about 10 minutes before transferring them to a wire rack.
