Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream softened butter and granulated sugar in a mixing bowl until fluffy. Mix in eggs one at a time, then stir in vanilla until combined.
  3. In another bowl, whisk together flour and baking powder. Gradually fold this dry mixture into the wet ingredients until just combined.
  4. Drop spoonfuls of dough onto the baking sheets, spacing them two inches apart. Bake for about 10 minutes or until lightly golden around edges. Cool completely on a wire rack.
  5. While cooling, mix powdered sugar and heavy cream until smooth; add food coloring if desired.
  6. Spread frosting on the flat side of one cookie and top with another to form a sandwich.
