  • 4 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 pound ziti pasta
  • 1 pound fresh spinach
  • 2 cups ricotta cheese
  • 1.5 cups grated smoked mozzarella cheese
  • 0.25 cups grated pecorino or Parmesan cheese
  • Fresh parsley and basil for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook ziti pasta in salted water until al dente; drain.
  3. Sauté spinach in olive oil until wilted.
  4. Mix ricotta, lemon zest, oregano, half smoked mozzarella, salt, red pepper flakes, and black pepper in a bowl.
  5. Layer half of the marinara sauce in a baking dish; add half the ziti followed by half the spinach and half the cheese mixture. Repeat layers.
  6. Pour remaining marinara on top and sprinkle with remaining cheeses.
  7. Bake uncovered for 30 minutes until bubbly and golden.
