  • 8 oz spaghetti or bucatini
  • 1 cup freshly grated Parmesan cheese (about 100g)
  • 1 cup freshly grated Pecorino Romano cheese (about 100g)
  • 1 tsp freshly cracked black pepper
  • 2 tbsp unsalted butter
  • 1 medium sweet onion, thinly sliced
  • Salt to taste

Instructions

  1. Boil salted water and cook spaghetti or bucatini until al dente. Reserve ½ cup of pasta water before draining.
  2. In a pan, melt butter over medium heat, add onions, and stir occasionally for about 15-20 minutes until golden brown.
  3. Return drained pasta to the pot over low heat, mix in half of each cheese and black pepper, adding reserved pasta water gradually for creaminess.
  4. Fold in caramelized onions until well mixed.
