  • 1 pound Boneless skinless chicken breast (cut into bite-sized pieces)
  • 2 pounds Brussels Sprouts (trimmed and halved if too big)
  • 1 Cup Milk of choice (dairy or non-dairy)
  • ¼ Cup Shredded Cheese
  • 23 Garlic Cloves (minced)
  • 1 tablespoon Cornstarch
  • Freshly squeezed lemon juice
  • 2 tablespoons Avocado oil (divided)
  • 1 tablespoon Chopped parsley
  • Salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown, then season lightly with salt and pepper and set aside.
  2. In the same skillet, add another tablespoon of avocado oil and sauté the halved Brussels sprouts until they begin to brown and become tender.
  3. While the sprouts are cooking, whisk together the milk, minced garlic, lemon juice, cornstarch, salt, and pepper in a bowl until well combined.
  4. Pour the milk mixture over the sautéed Brussels sprouts in the skillet. Stir to deglaze any bits at the bottom of the pan and simmer until everything thickens nicely.
  5. Return the cooked chicken to the skillet along with shredded cheese; stir gently until heated through and melty.
  6. Serve warm, garnished with freshly chopped parsley.
