  • 2 tbsp groundnut oil (peanut oil or sesame oil, divided)
  • 1 zucchini (sliced into half-moons)
  • 1 large carrot (cut into matchsticks)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup roasted peanuts (coarsely chopped)
  • 2 green onions (sliced, to garnish)

Instructions

  1. Begin by chopping the chicken into bite-sized pieces. Coat with cornstarch, garlic powder, and ground ginger.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the seasoned chicken and stir-fry for about 6-8 minutes until browned and cooked through. Stir in the soy sauce at the end.
  3. In the same pan, add another tablespoon of oil and toss in zucchini and carrots. Stir-fry for 3-5 minutes until they are crisp-tender.
  4. Combine everything back in the pan by adding the peanuts and cooked chicken, stirring well to mix all flavors.
  5. Serve warm, garnished with sliced green onions.
