  • 2 cups cooked brown rice
  • 6 cups fresh broccoli (cut into small florets)
  • 2 tablespoons olive oil
  • 1 small onion (diced)
  • 2 tablespoons gluten-free flour
  • 2 cups milk
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon dry mustard powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese (divided)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F.
  2. Season the chicken cubes with salt and pepper. Drizzle with 1 tablespoon olive oil and mix well. Spread them in a single layer in a greased casserole dish.
  3. Bake the chicken for about 10 minutes until slightly browned but not fully cooked.
  4. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Sauté the diced onion until translucent.
  5. Sprinkle the gluten-free flour over the onions and stir to combine for about one minute.
  6. Gradually whisk in the milk followed by garlic powder, onion powder, dry mustard, smoked paprika, salt, and pepper until the sauce thickens.
  7. Stir in the cooked brown rice, broccoli florets, and half of the cheddar cheese until well combined.
  8. Pour this mixture over the baked chicken and top with remaining cheese.
  9. Bake for another 20 minutes or until bubbly and golden.
