  • 2 cups cooked chicken breast (grilled, shredded, or rotisserie)
  • 3 cups pasta (fusilli, penne, or bowtie)
  • 1 cup cherry tomatoes (halved)
  • ½ cup fresh mozzarella balls or crumbled feta cheese
  • ¼ cup red onion (thinly sliced)
  • 1 cup baby spinach or arugula
  • ¼ cup pine nuts or almonds
  • 2 cups fresh basil leaves
  • 2 garlic cloves
  • ½ cup grated Parmesan cheese
  • â…“ cup olive oil
  • 1 tablespoon lemon juice
  • Salt & pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and let cool.
  2. In a food processor, combine basil leaves, garlic cloves, pine nuts, Parmesan cheese, and olive oil; blend until smooth. Add lemon juice and season with salt and pepper.
  3. In a large mixing bowl, combine the cooled pasta with cooked chicken, cherry tomatoes, red onion, spinach or arugula, and mozzarella or feta cheese.
  4. Pour the pesto over the salad and toss gently to coat all ingredients evenly.
  5. Adjust seasoning if needed and serve immediately or refrigerate for about 30 minutes to enhance flavors.
