  • 2 lbs boneless skinless chicken breasts
  • 1 can (14.5 oz) petite diced tomatoes with green chilies
  • 3 bell peppers
  • 1 large yellow onion
  • 4 cloves garlic
  • 2.5 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 0.75 tsp ground coriander
  • 1 tsp salt
  • 0.75 tsp pepper
  • 2 Tbsp fresh lime juice
  • 1 Tbsp honey
  • 12 6-inch flour tortillas
  • Optional: cilantro, sour cream, salsa, guacamole or sliced avocados, shredded Mexican cheese

Instructions

  1. Pour half of the diced tomatoes into the slow cooker. Layer with half of the sliced bell peppers and onions, then sprinkle in minced garlic.
  2. Place chicken breasts on top and season with mixed spices. Add remaining tomatoes and veggies.
  3. Cover and cook on HIGH for 2 – 3 hours or LOW for 4 – 6 hours until chicken is tender.
  4. Shred chicken within the slow cooker; whisk together lime juice and honey before adding back to mix.
  5. Serve warm in tortillas with desired toppings.
