  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp poppy seeds
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 170°C (340°F) and prepare two springform pans by lining them with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until smooth. Add the eggs one at a time along with the vanilla extract, mixing well after each addition. Incorporate the oil, milk, and lemon juice until fully combined.
  3. Sift together the flour, baking powder, baking soda, and salt over the wet mixture. Gently fold the dry ingredients into the wet mixture until just combined; be careful not to overmix. Add in poppy seeds and lemon zest.
  4. Divide the batter evenly into the prepared pans and bake for 25-27 minutes or until a toothpick comes out clean from the center. Allow cakes to cool before removing them from pans.
  5. For the topping, whip heavy cream with powdered sugar and vanilla extract until soft peaks form. Layer between the cooled cakes or spread on top.
