  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh dill (optional, chopped)
  • 2 cups fresh spinach (roughly chopped, optional)
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or maple syrup for vegan)
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey (or maple syrup), minced garlic, salt, and pepper.
  3. In a large mixing bowl, combine cooled orzo with cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, parsley, dill (if using), and spinach.
  4. Pour dressing over the salad mixture and toss gently to combine.
