  • 1 jalapeno, diced
  • 4 cups chicken bone broth
  • 1.5 cups sour cream
  • 0.5 cups shredded Monterey Jack cheese
  • 4 cloves garlic, minced
  • 0.5 tablespoon dried oregano
  • 0.5 teaspoon chili powder
  • 2 cups frozen sweet white corn
  • 0.5 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 3 tablespoons cornstarch mixed with 3 tablespoons water

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté the onion and jalapeno until softened. Add garlic, oregano, and chili powder; stir well.
  2. Pour in the chicken broth along with the chicken breasts. Season with salt and pepper; bring to a boil.
  3. Reduce heat and simmer for about 10-15 minutes until the chicken is cooked through. Remove chicken to shred using two forks.
  4. Return shredded chicken to the pot along with sour cream, cheese, cilantro, corn, lime juice, and cornstarch mixture.
  5. Simmer uncovered for an additional 10 minutes to thicken before serving.
