  • 2 Tbsp olive oil
  • 1 cup diced yellow onion
  • 1 cup diced carrots
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 15-oz can fire roasted tomatoes
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 2 bay leaves
  • 1 pound fresh or frozen meatballs
  • 1 2-inch square parmesan rind or ¼ cup shredded parmesan
  • 1 cup orzo pasta (dry)
  • ¼ cup chopped Italian parsley
  • ¼ cup chopped basil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and minced garlic; sauté until softened (about 5-7 minutes).
  2. Stir in chicken broth, fire roasted tomatoes, oregano, basil, bay leaves, meatballs, and parmesan rind. Bring to a boil over medium-high heat.
  3. Once boiling, add dry orzo pasta. Lower the heat to medium-low and cover; simmer for about 12 minutes until the pasta is al dente.
  4. Remove bay leaves and parmesan rind. Stir in chopped herbs; season with salt and pepper to taste.
  5. Serve hot in bowls topped with additional herbs or cheese if desired.
