  • 45 salmon fillets (skin on)
  • 3 large garlic cloves (minced)
  • 5 ounces fresh spinach (roughly chopped)
  • 6 ounces button mushrooms (sliced)
  • ¼ cup vegetable broth
  • ¾ cup coconut cream
  • Kosher salt and pepper (to taste)
  • 2 tablespoons olive oil

Instructions

  1. Rinse and pat dry the salmon fillets; season both sides with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Sear the salmon skin-side up for 4-5 minutes until golden.
  3. Flip and cook for another 4-6 minutes until fully cooked. Remove from the pan.
  4. In the same pan, add remaining olive oil and sauté minced garlic until fragrant. Add sliced mushrooms and cook until tender.
  5. Pour in vegetable broth and coconut cream; simmer gently while stirring well.
  6. Stir in chopped spinach until wilted, about 1-2 minutes.
  7. Return salmon to the pan, spoon sauce over each fillet, and serve hot.
