  • 1 teaspoon salt
  • 1/2 cup shredded mozzarella or crumbled goat cheese
  • 1/4 cup fresh basil leaves (chopped or torn)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/4 teaspoon black pepper

Instructions

  1. Roll out the pie crust into a 12-inch circle and refrigerate while prepping the filling.
  2. Thinly slice tomatoes and sprinkle lightly with salt; let sit for 10–15 minutes to draw out moisture. Pat dry.
  3. Place rolled-out dough on parchment paper; spread cheese over the center, leaving a 2-inch border.
  4. Layer tomato slices over cheese; sprinkle basil, garlic, salt, and pepper on top.
  5. Fold edges of dough over filling, overlapping slightly.
  6. Brush crust with beaten egg (optional) and drizzle olive oil over tomatoes. Bake at 400°F (200°C) for 35–40 minutes until golden brown.
