  • 1 Large Red Onion (diced)
  • 4 Garlic Cloves (minced)
  • 14 ounces Diced Tomatoes With Juices
  • 28 ounces Crushed Tomatoes
  • 5 Cups Vegetable Broth
  • 1 Cup Uncooked Quinoa
  • 15 ounces Red Kidney Beans (drained and rinsed)
  • 30 ounces Black Beans (drained and rinsed)
  • 1 Cup Frozen Corn (thawed)
  • 7 ounces Diced Green Chiles
  • 2 tablespoons Chili Powder
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Smoked Paprika
  • 1 tablespoon Unsweetened Cocoa Powder
  • Kosher salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon of Extra Virgin Olive Oil in a large skillet over medium heat. Add 1 diced Red Onion and sauté until translucent.
  2. Stir in 4 minced Garlic Cloves and cook until fragrant (about 1 minute).
  3. Add 14 ounces of Diced Tomatoes, 28 ounces of Crushed Tomatoes, and 5 cups of Vegetable Broth. Mix well.
  4. Incorporate the 15 ounces of drained Red Kidney Beans, 30 ounces of drained Black Beans, 1 cup of thawed Frozen Corn, 1 cup of Uncooked Quinoa, and 7 ounces of Diced Green Chiles.
  5. Season with 2 tablespoons Chili Powder, 2 teaspoons Ground Cumin, 2 teaspoons Smoked Paprika, and 1 tablespoon Unsweetened Cocoa Powder. Add Kosher salt and pepper to taste.
  6. Reduce heat to low, cover the skillet, and let simmer for about 15-20 minutes until quinoa is cooked through.
  7. Serve warm with your choice of toppings such as shredded cheese or avocado.
