  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons chipotle mayo
  • 1/4 cup crumbled cotija cheese
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons finely diced red onion
  • 1 tablespoon finely diced jalapeño (optional)
  • Paprika for garnish

Instructions

  1. Boil the eggs in cold water until hard-boiled (about 10-12 minutes). Cool under cold water.
  2. Peel eggs, slice in half, and remove yolks into a bowl.
  3. Mash yolks with mayonnaise, sour cream, cilantro, lime juice, chili powder, salt, and pepper until smooth.
