Ingredients

Scale
  • 3 tablespoons olive oil
  • 4 large sweet onions (thinly sliced)
  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 ½ cups milk
  • ¼ teaspoon freshly ground nutmeg
  • 12 ounces gruyere cheese (freshly grated)
  • 4 ounces parmesan cheese (freshly grated)
  • ⅓ cup seasoned bread crumbs
  • Fresh thyme (for garnish)

Instructions

  1. In a large oven-safe skillet, heat olive oil over medium heat. Add onions and a pinch of salt; cook for about 10-15 minutes until softened.
  2. Lower the heat and stir frequently for 60-90 minutes until onions are golden brown.
  3. Preheat your oven to 375°F (190°C). Cook pasta according to package directions until al dente.
  4. In the same skillet, melt butter over medium heat. Whisk in flour until smooth.
  5. Gradually pour in milk while stirring until thickened; add nutmeg and most of the grated cheese, stirring until melted.
  6. Fold in caramelized onions and cooked pasta; mix well.
  7. Transfer to the skillet or a baking dish; top with remaining cheese, onions, and breadcrumbs. Bake for 25-30 minutes until bubbly and golden brown.
  8. Let cool slightly before serving; garnish with fresh thyme.
