Ingredients

Scale
  • 34 pounds chicken pieces (drumsticks, thighs, wings, or breast pieces)
  • 2 cups buttermilk
  • 1 tablespoon hot sauce (optional)
  • Salt and black pepper to taste
  • Vegetable oil for frying
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper (adjust for spice preference)

Instructions

  1. 1. Marinate the Chicken: In a bowl, mix buttermilk, hot sauce (if using), salt, and black pepper. Add chicken pieces to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight.
  2. 2. Prepare the Coating: In a shallow dish or large bag, mix flour with paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until combined.
  3. 3. Dredge the Chicken: Preheat vegetable oil in a large skillet to 350°F (180°C). Remove chicken from marinade and dredge in the flour mixture until well-coated.
  4. 4. Let it Rest: Place coated chicken on a wire rack and let rest for 15-20 minutes.
  5. 5. Fry the Chicken: Carefully add chicken to hot oil without overcrowding. Fry for about 12-15 minutes or until golden brown and the internal temperature reaches 165°F (74°C). Drain on paper towels.
  6. 6. Serve Hot: Enjoy your fried chicken with favorite sides.
