  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • (16-ounce) package potato gnocchi
  • 2 cups fresh spinach
  • ¼ cup fresh basil, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season diced chicken with salt, pepper, and Italian seasoning. Cook until golden brown, about 5-7 minutes. Remove from skillet and set aside.
  2. In the same skillet, sauté minced garlic and halved cherry tomatoes for 2-3 minutes until softened.
  3. Add heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese and optional red pepper flakes.
  4. Add potato gnocchi to the skillet, ensuring they are submerged in the sauce. Cover and simmer for 5 minutes until tender.
  5. Stir in fresh spinach and basil along with the cooked chicken. Heat through for another couple of minutes.
