  • 2 pounds Brussels sprouts
  • 6 to 8 salmon fillets (3 to 4 ounces each)
  • 3 tablespoons olive oil
  • 5 cloves garlic, finely minced
  • 1 tablespoon dried oregano
  • ¾ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Trim and halve the Brussels sprouts; toss them in a bowl with olive oil, minced garlic, salt, and pepper.
  2. Spread the seasoned Brussels sprouts on one side of a large sheet pan.
  3. Pat dry the salmon fillets. In a small bowl, mix olive oil, minced garlic, dried oregano, salt, and pepper. Brush this mixture over the salmon fillets.
  4. Place the salmon on the other side of the sheet pan alongside the Brussels sprouts.
  5. Roast in the oven for about 25 minutes until the salmon flakes easily with a fork.
