  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole milk or 2%)
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini, fresh or refrigerated
  • ½ cup shredded mozzarella, for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Season the steak with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear the steak until browned; remove and set aside.
  2. In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant. Stir in flour to create a roux, then gradually whisk in milk and beef broth until smooth. Incorporate cheddar cheese until melted and creamy.
  3. Cook the tortellini according to package instructions but slightly undercook them. Drain and toss with olive oil.
  4. Grease a baking dish with olive oil or butter. Combine cooked tortellini with seared steak and pour the cheese sauce over everything. Mix gently and top with mozzarella.
  5. Bake uncovered for 20–25 minutes until bubbly and golden. Garnish with chopped parsley before serving.
