  • 1 pound flank steak
  • 3 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 4 large pita bread
  • 1 cup fresh tomatoes, diced
  • 1 cup cucumber, chopped
  • 1 small red onion, thinly sliced
  • Feta cheese, for sprinkling (optional)

Instructions

  1. In a large bowl, whisk together olive oil, apple cider vinegar, minced garlic, oregano, cumin, salt, and pepper.
  2. Add the flank steak to the bowl and coat it evenly. Cover and refrigerate for at least 30 minutes.
  3. While the steak is marinating, preheat your grill or grill pan over medium-high heat.
  4. Once marinated, remove the steak from the marinade and discard it. Grill the steak for about 4-5 minutes per side until it reaches your desired doneness.
  5. After grilling, let your steak rest for about 5-10 minutes before slicing.
  6. In a separate bowl, mix together Greek yogurt, lemon juice, dill, and a pinch of salt to prepare the tzatziki sauce.
  7. Thinly slice the grilled steak against the grain.
  8. Lightly grill or warm each pita bread on your grill for about 1-2 minutes until they're soft and pliable.
  9. Lay each warmed pita flat, layer with sliced steak, diced tomatoes, cucumber chunks, red onion slices, and a generous dollop of tzatziki sauce.
  10. If desired, sprinkle feta cheese on top before wrapping each pita around its filling.
