  • 1.5 pounds boneless skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1/2 tsp sea salt
  • 1 pound cherry tomatoes (halved)
  • 6 ounces fresh mozzarella pearls (drained and halved)
  • 1 tbsp extra virgin olive oil
  • 8 large leaves of basil (sliced)
  • Flaked Maldon finishing sea salt to taste
  • 2 pounds zucchini (sliced)

Instructions

  1. Marinate the chicken in olive oil, balsamic vinegar, maple syrup, and sea salt for at least 2 hours or overnight.
  2. Preheat the grill to medium-high heat (around 400°F).
  3. While the grill heats up, combine halved cherry tomatoes, mozzarella pearls, and olive oil in a bowl. Add sliced basil.
  4. Grill the marinated chicken for about 8-10 minutes on each side until fully cooked (internal temperature should reach 165°F).
  5. Allow the chicken to rest before slicing and serving topped with the Caprese salad mix.
