  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)
  • 8 cups chopped romaine (kale, or other greens, or a mix)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 medium cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 6 hard-boiled eggs (sliced)

Instructions

  1. Whisk together honey, dijon mustard, lemon juice (or vinegar), avocado oil, and sea salt in a small bowl to create the dressing.
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder. Grill over medium-high heat for 5 minutes per side until cooked through.
  3. In a large bowl, combine chopped greens, halved cherry tomatoes, sliced cucumber, avocado slices, and hard-boiled eggs.
  4. Slice the grilled chicken and place on top of the salad base. Drizzle with honey dijon dressing before serving.
