  • 1 lb large shrimp, peeled and deveined
  • 1 cup frozen corn, thawed
  • 1 avocado, sliced or mashed
  • ½ cup red onion, diced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 jalapeño, seeded and minced (optional)
  • ¼ cup cilantro, chopped
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. Toss shrimp in olive oil and spices; let marinate for at least 15 minutes.
  2. In a bowl, combine corn, red onion, jalapeño (if using), cilantro, lime juice, and salt to make the corn salsa.
  3. Preheat your grill to medium heat and grill shrimp for about 2–3 minutes on each side until pink and opaque.
  4. Whisk together mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and pepper for the creamy sauce.
  5. Assemble bowls: layer corn salsa at the bottom followed by grilled shrimp and avocado on top.
  6. Drizzle with creamy garlic sauce and garnish with sesame seeds and green onions.
