  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mix vegetable oil and eggs until blended. Stir in carrots, crushed pineapple, shredded coconut.
  4. Fold wet mixture into dry ingredients until just combined.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for about 10 minutes before transferring to wire racks to cool completely.
  7. For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla until fluffy.
  8. Once cooled, frost the top of one cake layer before adding the second layer on top and frost both layers generously.
