  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno
  • 16 oz frozen corn
  • 4 cups cooked chicken breast
  • 1/2 cup light mayo
  • 1/2 cup plain nonfat Greek yogurt
  • Juice and zest of 1 lime
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 2 tsp chili powder
  • 1 bunch scallions
  • 1/2 cup fresh cilantro

Instructions

  1. Preheat oven to 400°F. Chop the bell pepper, onion, and jalapeno; spread them along with frozen corn on a baking sheet. Spray lightly with olive oil and sprinkle with salt. Roast for about 20 minutes until tender.
  2. In a bowl, whisk together the light mayo, Greek yogurt, lime juice and zest, cumin, paprika, salt, and chili powder until smooth.
  3. Once the vegetables have cooled slightly, chop the cooked chicken into chunks. Combine it with the roasted veggies in the bowl with dressing and mix well.
  4. Fold in chopped scallions and cilantro before serving. Garnish with crumbled Cotija cheese if desired.
