  • 4 cups sweet potatoes, peeled and diced
  • 6 strips turkey bacon, cooked and crumbled
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 cup fresh spinach leaves (optional)
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat your oven to 375°F (190°C). Toss diced sweet potatoes in olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until tender.
  2. Cook turkey bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into pieces.
  3. In the same skillet, sauté onion and bell pepper for 3-4 minutes until softened; add spinach if using and cook until wilted.
  4. In a large bowl, whisk together eggs, milk, garlic powder, smoked paprika, salt, and pepper.
  5. Grease a 9×13-inch baking dish. Layer roasted sweet potatoes, crumbled bacon, and sautéed vegetables in the dish. Pour egg mixture evenly over the top.
  6. Bake for 25-30 minutes until golden brown and set.
