  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium zucchini, diced
  • 1 (14.5 oz) can diced tomatoes (no salt added)
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (about 5 minutes), then add minced garlic and cook until fragrant (about 1 minute).
  2. Stir in chopped carrots and celery; cook until softened (around 7 minutes).
