  • 2 tbsp olive oil
  • 8 oz shiitake mushrooms (thinly sliced)
  • 2 tbsp fresh ginger (minced)
  • 4 cloves garlic (minced)
  • 6 cups vegetable broth
  • 2 tbsp soy sauce
  • 1620 oz frozen potstickers
  • 5 scallions (thinly sliced)
  • 3 baby bok choy (leaves separated)
  • 2 tsp toasted sesame oil
  • Freshly-ground black pepper (to taste)

Instructions

  1. Heat 1 tablespoon of olive oil in a stockpot over medium-high heat. Add shiitake mushrooms and sauté until browned and fragrant.
  2. Add remaining olive oil, minced garlic, and ginger; sauté for an additional 1-2 minutes until aromatic.
  3. Pour in vegetable broth and soy sauce, stirring well. Bring to boil.
  4. Add frozen potstickers, half of the scallions, and bok choy leaves to boiling broth. Reduce heat to simmer for about 3-4 minutes until potstickers are heated through.
  5. Stir in toasted sesame oil, season with soy sauce and freshly-ground black pepper to taste.
  6. Serve hot, garnished with remaining scallions.
