  • 1 tablespoon extra virgin olive oil
  • 3 cups cherry tomatoes
  • 610 cloves garlic (smashed)
  • 8 slices turkey slices
  • 1/2 cup ricotta cheese
  • 1 pound long or short cut pasta
  • 2 tablespoons salted butter
  • 1/2 cup shredded gouda cheese
  • 1/3 cup grated parmesan cheese
  • 1/2 cup fresh basil
  • 3 tablespoons fresh thyme leaves
  • 2 tablespoons chopped fresh rosemary
  • Crushed red pepper flakes
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, garlic, thyme, rosemary, red pepper flakes, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. In a large bowl, combine roasted tomatoes (and garlic), turkey slices, ricotta cheese, cooked pasta, butter, gouda cheese, and fresh basil.
  4. Transfer the mixture to a greased baking dish. Top with additional gouda or parmesan if desired. Bake at 375°F (190°C) for about 30 minutes until bubbly and golden brown.
  5. Allow to cool slightly before serving.
