  • 1.2 lb. chicken breasts (diced)
  • 1 cup Jasmine or basmati rice (cooked)
  • 1 tbsp sesame oil
  • 4 cloves garlic (minced)
  • 1 carrot (thinly sliced)
  • 1 cup crimini mushrooms (sliced in half)
  • 1 yellow onion (chopped)
  • 1 zucchini (chopped)
  • ½ cup light mayo
  • 1 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Dijon mustard
  • Olive oil
  • Salt & pepper to taste

Instructions

  1. Prepare the Sauce: In a bowl, mix together the light mayo, soy sauce, rice vinegar, and Dijon mustard. Set aside.
  2. Marinate the Chicken: Combine diced chicken with sesame oil, soy sauce, minced garlic, and ginger in a large bowl. Let it marinate in the fridge for about 15 minutes.
  3. Cook the Chicken: Heat a skillet over medium-high heat and add marinated chicken. Cook until golden brown and fully cooked through, approximately 10-12 minutes.
  4. Prepare the Rice: Rinse rice under cold water until clear. Boil water in a pot, add salt and rice, cover and simmer until tender.
  5. Sauté the Veggies: Remove cooked chicken from skillet; heat olive oil and sauté carrots, mushrooms, onions, and zucchini for about 2-3 minutes until tender-crisp.
  6. Combine: Return chicken to skillet with veggies; stir to combine and heat through.
  7. Assemble Bowls: Serve cooked rice topped with chicken-veggie mixture and drizzle with prepared sauce.
