  • 1 small shallot, finely chopped
  • 2 cloves garlic, crushed
  • 1/4 cup chopped sun-dried tomatoes (not in oil)
  • 1 cup low-sodium chicken broth
  • 1/2 teaspoon chili crunch oil or a pinch of red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons grated Parmesan cheese
  • 1/2 cup blended cottage cheese
  • 3 tablespoons chopped fresh basil

Instructions

  1. Season the chicken breasts with kosher salt and pepper.
  2. Sauté chopped shallots and crushed garlic in olive oil until fragrant. Sear the chicken until golden on both sides.
  3. Transfer seared chicken to the slow cooker and add sun-dried tomatoes and chicken broth.
  4. Cook on LOW for 4–6 hours.
  5. Stir in cornstarch slurry to thicken sauce about 30 minutes before serving.
