  • 2 Tbsp Tomato Purée (paste)
  • pounds Lean Ground Beef
  • 1½ tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Cayenne Pepper (optional)
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 Bell Peppers (diced)
  • 3 Cups Beef or vegetable broth
  • 23 Chipotle Peppers in Adobo Sauce
  • 15 ounces Kidney Beans, one can (drained)
  • 15 ounces Chopped/Diced Tomatoes
  • Freshly chopped cilantro or parsley (for garnish)
  • Grated cheddar cheese (for serving)
  • Sour Cream (for serving)
  • Thinly sliced spring onions (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté chopped onion until translucent, then add minced garlic and tomato purée; cook for an additional minute.
  3. Add ground beef, breaking it apart; cook until browned.
  4. Stir in chili powder, cumin, oregano, smoked paprika, salt, and pepper; mix well.
  5. Incorporate diced bell peppers and broth; bring to a boil.
  6. Add chipotle peppers, kidney beans, and diced tomatoes; reduce heat to low and simmer for 30 minutes.
