  • 41/2 cups corn (fresh or frozen)
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 11/2 cups diced yellow onion
  • 1 cup diced carrot
  • 3 cups diced baby gold potatoes (unpeeled)
  • 2 cups vegetable broth
  • 3 cups whole milk
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. If using fresh corn, cut kernels off the cobs and set aside. Save the cobs for flavor.
  2. In a large pot over medium heat, melt the butter. Add onion, carrot, and garlic; sauté until softened.
  3. Sprinkle flour over vegetables and stir for one minute. Add diced potatoes, Italian seasoning, thyme, and reserved corn cobs.
  4. Gradually pour in vegetable broth, scraping any browned bits from the bottom of the pot. Stir in milk and bring to a simmer.
  5. Cover and cook gently until thickened, about 20 minutes. Remove cobs and stir in fresh corn kernels and heavy cream.
  6. Season with salt and pepper; serve warm topped with fresh herbs if desired.
