  • 30 ounces chickpeas (2 cans, rinsed and drained)
  • ¼ cup lemon juice (from 1 ½ to 2 lemons)
  • 12 garlic cloves (roughly chopped)
  • Kosher salt and pepper (to taste)
  • ½ cup tahini
  • ¾ teaspoon ground cumin
  • 2 tablespoons extra virgin olive oil
  • ¼ cup water or 3 ice cubes

Instructions

  1. Drain and rinse the chickpeas in a colander.
  2. If desired, peel the chickpeas for an ultra-smooth texture.
  3. In a high-powered blender, combine chickpeas, tahini, lemon juice, garlic, water or ice cubes, cumin, olive oil, salt, and pepper.
  4. Blend on high for about 30 seconds until smooth; scrape down sides as needed. Adjust consistency with more water if too thick.
  5. Transfer hummus to a bowl and create swirls in the center using the back of a spoon. Taste and adjust seasoning.
  6. Drizzle with olive oil and garnish with paprika or fresh herbs before serving.
